This aged tonkatsu sauce is the ideal accompaniment to all breaded meats (pork, veal and chicken) plus grilled meat and vegetables. A must with popular Japanese street food dishes such as okonomiyaki (savoury pancakes) and takoyaki (octopus in batter).
Inspired by the success of imported English Worcestershire sauce in the early 19th Century, Oliver Sauce created the first Tonkatsu sauce in 1948. The name comes from one of the dishes the sweet and sour, vinegar-based sauce was designed to accompany: deep-fried pork cutlets. This tonkatsu sauce is made without high fructose corn syrup, using high-quality ingredients.

Traditional Tonkatsu sauce is produced by boiling vegetables, spices and fruit such as apple puree, tomato paste, onion and soy sauce. This is allowed to naturally separate, and the sauce is taken from above the layer of ingredients that naturally fall to the bottom.
This 3-year-aged sauce did not come about until a chance discovery in 1995. When a large earthquake caused the company premises to be badly affected by fire, sediment was left in the tanks until reconstruction was complete. It was discovered the sediment had naturally aged to produce a thick sauce with an exceptionally rich aroma and flavour.
